Method
- Rim a double rocks glass with Tajín and salt, fill with ice.
- Lightly muddle jalapeño in a shaker.
- Add tequila, pineapple juice, lime juice, and agave.
- Add ice and shake until very cold.
- Fine strain into the prepared glass.
- Garnish with pineapple wedge and jalapeño slice.
Notes
- For less heat, skip muddling and simply shake with one jalapeño round for aroma.
- To batch for a group, multiply ingredients by 6, stir in a pitcher with ice, and pour over fresh ice in rimmed glasses.
