Pineapple Jalapeño Margarita

Ingredients
  

  • 2 oz reposado tequila
  • 2 oz fresh pineapple juice
  • 1 oz fresh lime juice
  • 0.5 oz agave nectar
  • 2 to 3 jalapeño rounds seeds removed for mild heat
  • Tajín and kosher salt for rim
  • Ice
  • Pineapple wedge and jalapeño slice for garnish

Method
 

  1. Rim a double rocks glass with Tajín and salt, fill with ice.
  2. Lightly muddle jalapeño in a shaker.
  3. Add tequila, pineapple juice, lime juice, and agave.
  4. Add ice and shake until very cold.
  5. Fine strain into the prepared glass.
  6. Garnish with pineapple wedge and jalapeño slice.

Notes

  • For less heat, skip muddling and simply shake with one jalapeño round for aroma.
  • To batch for a group, multiply ingredients by 6, stir in a pitcher with ice, and pour over fresh ice in rimmed glasses.
